Christmas beans, or fajioli del papa (Pope's Beans) as they are known in Italy are are ideal in a salad, full bodied enough for a casserole, or simply sauteed alone with some garlic. While dining at L'Express in Montreal, I spotted this visually appealing avocado and tomato appetizer being served with crostini, and I was determined to reproduce it at home. It might not be the actual recipe but at least, I was able to recapture the look.
