I suppose it depends whats she is making. You could always use liquors, such as Kahlua, or even a chocolate liquor, granted she is making some sort of baked good? What about something with anise or cardamom flavoring? Cook with a dark beer?

She might want to try substituting the expresso with cocoa powder in her bake.
