  • October Cooking Club Challenge Results, Part IV: The Final Batch of Pumpkin Pies

    Thanks to everyone for participating in October's Cooking Club Challenge . Be sure to get a move on for November's Challenge: Irish Lamb Stew . As promised, we've selected some winning entries this month: Sean W. turned his lack of a digital camera into an opportunity and sent us a very entertaining video of his recipe experience; Nicole D. used her leftover filling to create the cutest pumpkin pie tarts ; and Jenn from the Chocolate Shavings blog who submitted a magazine-worthy shot of her pie (below). Here's the last batch of entries: From Cathy W. who used the additional pie filling to fill ramekins: I made the pumpkin pie for Thanksgiving and I have tell you it lives up to its name, it is the most perfect pumpkin pie I have ever had. This happened to be the first pie I have ever made and I followed the recipe to a "T" and it turned out wonderful. I had some pie filling left over after filling the pie crust so I filled ramekins and baked them in a water bath. They were just as big a hit as the pie. I loved the whipped cream; it just made the recipe. Thank you for all the great recipes and this pie is now our family favourite for holidays. From Jenn at the Chocolate Shavings blog: I absolutely loved the pumpkin filling in this recipe. The blend of spices, pumpkin and cream were just delicious and easy to make. I didn't love the dough as much though, especially with the addition of vegetable shortening. I made this pie twice and used a more simple dough recipe the second time which I though worked better. I also pre-cooked the dough for a few minutes which helped the texture a lot. Overall though, this was delicious, especially as it was my first pumpkin pie!   • October Cooking Club Challenge Results, Part III: More Delectable Pumpkin Pie Submissions

    Anna Olson's Perfect Pumpkin Pie didn't disappoint. Here are even more submissions! From Nicole D. who created these gorgeous little pumpkin pie tarts: I really enjoyed this month's challenge. I made the pie as well as some tarts as there was so much filling. I've attached a couple pics of the tarts for you. Here are my thought on this challenge: I have very little experience making pies. I did have some difficulty with the dough which seems laughable when the recipe is so straight forward, but it was dry and rather crumbly. Luckily the dough was quite forgiving so I did patch jobs with my hands to repair any holes once I got it into the pie plate. I used the leftover scraps to make little decorative maple leaves using a cookie cutter. Taking my cue from others who had made this pie before me, I did blind bake it for about 10 minutes before filling. The filling is lovely. It thickened up over the course of baking and refrigerating and was very tasty and autumnal with all those spices. I did have an overabundance of it so I was able to make the pie, six tarts with some premade shells I had leftover in the freezer and still had some filling left over! The whipped cream was OK. I thought it could have stood maybe a touch a vanilla and been a bit sweeter but, against the pie, it worked well. Thanks for the challenge! From Kelly S. who teamed up with her roommate Sarah and incorporated squash into the recipe instead: For the October cooking club monthly recipe of Pumpkin Pie, my roommate Sarah and I decided to give it a little tweak and used some of the leftover squash we had cooked the night before in the recipe as a substitute for the canned pumpkin. While I prepared the flaky pastry Sarah mixed together the fresh squash filling in our blender with many fall spices that left our apartment with a very cozy aroma. I’m sure our neighbours were very jealous at the time. I enjoyed the taste of the squash, not finding it too different from the pumpkin of my childhood; I might even go so far as to say I enjoyed it more. Overall we were both very pleased with our pie since it was the first one we had made without the assistance from our mothers and enjoyed participating in this club.   • October Cooking Club Challenge Results, Part II: Delicious Pumpkin Pie Pics and a Video Submission, Too!

    There's a lot of love out there for Anna Olson's Perfect Pumpkin Pie . Some of you had issues with a jiggly filling even after extended baking times, but despite all that, most of you loved this recipe. This month resulted in a video entry. Sean W. was without a digital camera to take pics, so he decided to take it to the next level and make a video. Here's what Sean had to say: The digital camera was broken this time around, so I got the kids to help me make a video. The pie was easy to make and turned out well. I followed her recipe except for the crust. I used brandy instead of the water (the video explains a bit, or watch Good Eats ), which resulted in one of the better crusts I've turned out. The pie needed an extra half hour in the oven before things set. We also received many gorgeous photo entries this month. Take a look at some of the results: From Gill who didn't grow up with pumpkin pie, but was the Thanksgiving pie maker this year: Being a Brit, I didn't grow up with pumpkin pie, and have to admit that it has never been one of my favourites. But, always up for a challenge, and having been nominated "pie-maker" for the family Thanksgiving get-together, I decided to give it a try. I did try baking the pastry shell first, with somewhat disastrous results, as the pastry shrank considerably. However I continued on with the hope that everyone would enjoy the filling anyway. I also went back to make a second pie, as I had lots of pumpkin left over, this time using my usual short crust pastry recipe, which baked quite well. I have to say that either with lots of pastry, or with just a taste, the pie was a huge hit. The kids were asking for seconds even before I’d finished serving the first round! A great recipe for Thanksgiving! From Sara R. from the I Like to Cook blog: The pie was amazing. Really, truly, amazing. The filling was smooth, creamy, perfectly spiced, and almost mousse-like. It was borderline being slightly uncooked, but none of us complained. I cut myself a little sliver to be polite, gobbled it down and went back for a second sliver. We all loved it, even my Dad who is not a dessert person. He gave it a 9 out of 10. The rest of us gave it an 8 because the crust was definitely slightly undercooked.   • November Recipe Challenge: Jamie Oliver's Pumpkin Soup

    October Cooking Club Challenge or CCC (I'm getting tired of writing it out) has been our most successful to date. We had some 50 entries for Chocolate Chip Cookies a la Anna Olson. Everyone enjoyed the recipe except for one person. I loved going through all your submissions. They are really fun to read! After much humming and hawing, I'm going to send a copy of Anna Olson's Another Cup of Sugar to Lori (from batch five ) for adding a Halloween flare (I love the carved pumpkin in the picture); Sara M (from batch four ) for making it a collaborative effort with her six year old daughter; Jason (from batch three ) for his devotion to Anna Olson, Peter (from batch two ) for his gorgeous photo (plus I'm a sucker for men who bake), and to Sylvie (from batch one ) for making butterscotch chip versions for her son who's sadly allergic to chocolate! Thanks to everyone who participated. For the month of November, I'm picking Pumpkin Soup by Jamie Oliver , one of my favourite Food Network chefs. (He's coming to Toronto on the 15th and it looks like I may get a chance to interview him! More on that later). This recipe uses butternut squash which is perfect for those cold Canadian nights.
